Spicy Bean Burritos and Salsa

  • 1 Tins Refried Beans (435g)
  • 2 Red Peppers (320g)
  • 2 Tablespoons Vegetable Oil (10g)
  • 5 Tablespoons Cheddar Cheese (50g) (Reduced Fat Grated)
  • 4 Tortillas (256g)
  • 6 Tomatoes (510g) (Medium)
  • 1 Red onion (150g) (Medium)
  • 2 Red Chillies (10g)
  • 2 Lemons (0)
  • Olive Oil (20g)
  • 1 Teaspoons Basil (1g) (Optional)
  • 2 Garlic Cloves (6g)

To make the burritos:

  1. Heat the oven to 180°C / 350°F / 160°C fan oven / gasmark 4.
  2. Wash and chop the pepper, then fry in the oil in a frying pan until soft.
  3. Grate the cheese then add to the frying pan with the beans. Mix well.
  4. Spoon a quarter of the mixture into each tortilla and roll up.
  5. Place the filled tortillas in an ovenproof dish and cover with a lid or tinfoil. Bake for 15-20 minutes.


To make the salsa:

  1. Wash the tomatoes and chop into small pieces.
  2. Peel and finely chop the onion and garlic.
  3. Wash the chillies and cut in half lengthwise. Remove the seeds and the white bit around them and finely chop the chillies. Wash hands immediately afterwards.
  4. Squeeze the juice from the lemons into a bowl and add the chopped tomatoes, onion, garlic, chillies, olive oil and basil. Mix well and chill in the fridge until ready to serve.
