  • 2 Onions (120g) (Small Sized)
  • 2 Garlic Cloves (6g)
  • 4 Carrots (320g) (Medium Sized)
  • 2 Red Peppers (320g)
  • 2 Tablespoons Vegetable Oil (20g)
  • Water (1L)
  • 2 Vegetable Stock Cubes (14g) (Reduced Salt)
  • 18 Tablespoons Red Lentils (200g) (Level Spoonful)

  1. Peel and chop the onion, garlic and carrots. De-seed and chop the pepper.

  2. Fry the onion, garlic and pepper in oil over a medium heat in a large saucepan until soft.

  3. Add the carrots, water, stock cubes and lentils and bring to the boil.

  4. Simmer for around 45 minutes.

  5. Serve hot.
